Maizajo

Maizajo is a Mexican restaurant in Mexico City (Condesa), $$; open Mon–Sat 13:00–23:00; Sun 11:00–19:00.

Condesa shrine to heirloom corn-tortillería, taqueria, and upstairs restaurant in one building. Chef Santiago Muñoz's corn research project grew up into a full-fledged Condesa space: salmon tiles everywhere, a downstairs taqueria where the tortillas are pressed in front of you, and an upstairs dining room for dishes like oxtail with cegueza, black mole, and smoked octopus. Everything starts with native Mexican corn from small producers. Maizajo is listed in the 2026 Michelin Guide, recognized for building its Condesa menu entirely around nixtamalized native corn sourced from small Mexican producers, with tortillas pressed to order downstairs.
